These lettuce wraps are ridiculously good! Crispy, fresh, and filled with tofu, brown rice, crispy onions, and a drizzle of peanut sauce and spicy mayonnaise. Delicious!

How much I love a quick topping of pan-fried crumbled tofu and brown rice, coated in peanut sauce, nestled in tender little leaves of buttered lettuce and topped with a drizzle of spicy mayo and – of course – a few baby fried onions crunchy? Judging by the dozens (hundreds?) of these I’ve eaten, the answer is: A LOT.

There’s just something about those flavors and textures that makes a person feel good in their heart. It’s light but it’s hearty, it’s savory but a little sweet and spicy, it has a complexity of texture with a delicate, fresh crunch and an almost meaty filling, and it comes together so ridiculously quickly – I mean , let’s go ahead and accept right now that this is a recipe that can only be done once.

This recipe was our most prepared meal of the summer.

If you like a little spicy mayo on top (and I do, thank you very much), take your mayo and sriracha out of the fridge, and if you like a little crunchy onion action (yes, too), take it out. the pantry.

There you have it: savory tofu, peanut and brown rice lettuce wraps, arriving right away.

What I like about these lettuce wraps

There is so much to say!

  • Most lettuce wraps make me want more I think because they lack a carb element. Having brown rice (or quinoa, or another grain) in the topping solves that problem and makes them super satisfying as a complete meal.
  • Tofu is so low maintenance. Give it a quick squeeze over the sink, then place it in the pan and crumble it up. SOS-style.
  • The peanut sauce is semi-homemade, using a bottle of teriyaki to start. If you wanted to make your own peanut sauce, this is my reference. I’ve done it both ways and it’s great no matter how you choose to dip it with peanuts.
  • Makes good leftovers! The topping lasts for days and can be used in your extra lettuce leaves or on a salad or in a stir-fry… endless options.
  • It’s family approved! At least in my house, it does: my husband raves every time I make them, and my toddler is *so* excited for what we’ve called “lettuce wrap party.” We put yogurt on hers instead of spicy mayonnaise, and she’ll eat 2, 3, sometimes even 4. 😂 You never know with these little people.

This recipe has landed on our table so many times over the past 6 months and it’s everything I love in life: creamy, salty, gravy, spicy, a little sweet and light, crunchy and filling. Not to mention the easy SOS level.

Tofu and Brown Rice Lettuce Wraps: FAQ

It looks so good! Tell me! How can I upgrade them?

Fresh garlic, scallions, or ginger are great additions to your topping mix. And of course the homemade peanut sauce is fabulous (love, love, love this one). Go with whatever works! This recipe is meant to be flexible and easy.

How can I make them completely vegan?

The only trade you will have to make is to use plant-based mayonnaise!

How long will leftover toppings keep in the refrigerator?

3-5 days is ideal here for leftovers.

How could I add meat to this?

The easiest sub would be to use ground chicken or turkey instead of tofu!

Lettuce wraps

  • olive oil
  • A 14– ounce block Extra firm tofulightly pressed to remove water
  • on 2 cups brown rice and/or cooked quinoa or other cereals – I use the pre-cooked 8.5 ounce packages, so it’s very, very easy
  • butter lettuce or leaf lettuce for packing
  • spicy mayonnaise (see notes)
  • chopped peanuts or crispy onions for garnish

SOS Peanut Sauce

  • 1/2 Chopped off teriyaki sauce
  • juice 1 orange
  • 1/4 Chopped off Peanut Butter
  • a splash of Sriracha or other chili sauce if you want

If you have a little more time, you can also use this amazing homemade peanut sauce.


  1. Cook the tofu: Heat a few drizzles of oil in a nonstick skillet on medium-high. Add the tofu and crumble into the pan. Cook until lightly golden. While cooking, whisk together all the ingredients for the sauce in a bowl.

  2. Add rice and sauce: Add the rice and most of the sauce to the skillet. Sauté for about 5 minutes – just long enough to get a little light browning/caramelization and everything nice and delicious. Season with salt to taste.

  3. Fill and serve: Spoon your tofu and brown rice filling into small crispy lettuce pieces. Top with something crunchy (peanuts? Crispy onions?) and something creamy (spicy mayo all the way) and drizzle with some extra sauce, and now tell me that’s not your favorite meal of the week.

Remarks

Spicy mayonnaise: I usually mix about 1/4 cup of mayonnaise with about 1 tablespoon of sriracha. But super easy to make it more or less spicy depending on your heat tolerance!
